This one is also from Joy via AK. Sounds like it might go perfect with her Butternut Squash Soup! Just like a grilled cheese only way more sophisticated. Enough to impress your friends, and really isn’t that what cooking is all about? For each sandwich:

2 slices Whole Wheat bread
2 slices Mozzarella (any kind, though fresh mozz won’t work for this one)
2 slices Tomato
Pesto to lightly cover both sides of bread

Compile and grill in your George Foreman/on your stovetop/on the BBQ. Serve with panache!
