A vegetarian diet really is easier on the environment.

I've been a vegetarian since I was 14 for all the reasons there are to be one...health, a love of animaIs, and factory farming's serious impact on the environment (for my final grad school project I did some intense research on the difference in the carbon footprint of a pound of tofu vs a pound of beef).   
​
But I love to cook! So here are all my favorite vegetarian recipes. Some borrowed, some tweaked and some created from scratch. They can all make for pretty easy weeknight vegetarian dinners, provided you have a few essential pantry items. Enjoy!
